I read up and then came up with my own methods
I cooked the chicken for 3.5hrs, started at a lower temperature and increased it towards the end and finally came out with a perfectly cooked chicken that tastes so damn good its hard to believe that I achieved it in the very first attempt.
2.1kg chicken, cleaned it, spread mayo all over the skin, sprinkled chicken salt both inside and outside, placed a half can of coke (as in I cut it in half) and put water and some chicken salt, pepper and paprika in it and placed it in the back end of the chicken with foil to make the moisture go into the chicken, then I cooked it at 125 degrees C for 1hr and kept topping up the smoke with hickory wood chips, then increased the temperature to 150c turned the chicken over and placed the can near the gap between the smoke box and fire box. after 45 mins I turned the chicken over for another 45 mins, then I let the fire go down to 125c again for 1 hr, flipped the chicken twice in this time, still topped the wood chips as needed. then I cut the chicken in half for the remainder time I had it rib side down near the fire box side and heavy smoked the chicken at this point.
Result a perfectly well cooked chicken that tastes amazing, everyone loved it! (Less)

How to Make EASY Chinese New Year White Radish Turnip Cake
This cake on New Year's Day as a symbol of prosperity and rising fortunes.
English:
Steamed Chinese radish turnip cake made with rice flour.
First, prepare two deep round steaming tin.
If you only want to make for one deep round cake pan, just reduce everything's to half.
Ingredients:
1 cup rice flour
5 tsp corn flour or wheat starch
1 cups water of soaked (dried shrimps, dried scallops and dried mushrooms)
1 fresh Chinese white turnip (daikon)
Soak salted preserved (mooli) radish, rinse well and finely chop.
Red onions, dried shrimps, dried scallops, and dried mushrooms (soaked /diced)
3 tsp vegetable oil
Seasoning:
1 tsp salt
1 tsp sugar
1 tsp sesame oil
1 tsp white pepper
1 tsp Chinese wine
1 tsp chicken powder
Or light soy sauce
Red onion, dried shrimps and preserved (mooli) salted radish for garnish
Method:
In a big bowl; mix the 1cup rice flour with 5tsp corn flour well.
With 1cup water of soaked (dried shrimps, scallops and mushrooms) to make a thin batter, mix well. This is how it the radish cut slices look like!!!
Heat and add 3 tsps of vegetable oil stir fry (red onions, dried scallops, dried shrimps and dried mushroom, till fragrant.
Add Chinese white turnip (daikon) and seasoning to taste till well combined.
cover and cook until tender and translucent
and using the same wok, pour in the batter and cook on low fire till the batter slightly thickens, roughly about a few minutes.
Keep stirring the mixture so that the bottom won't get burnt. When the batter begins to thicken (you will see probably one or two bubbling), remove from fire.
Stir well and pour into the steaming tin.
Pour thick batter into a well-greased round steaming tin.
You can steam till cake is set and cooked through for 1 hour
Remove from heat and let cool in tin, You can eat Plain, nothing garnishing on top. Or just Spread the garnishing on top and press lightly, cut into pieces. Dish up and serve. Super yummy!! If any leftovers, you can put in the fridge and pan fry it in the next day)

(Add 2 tsps of vegetable oil in a non-stick wok, sauté red onion, dried shrimps and salted radish dices over medium heat. Prepare for garnish)
To pan fry:
Cut cake into bite size pieces.
Heat a non-stick pan with a little oil. Put in the cakes to fry, do not crowd. Do not turn cake until it is brown. When it is properly fried, turn cake and brown.
After pan-fried the outer skin is crispy and the inside of the cake is soft and nice.
Notes:
1. The amount of ingredients like dried shrimp, scallops, mushrooms and etc can be increased or decreased to suit your own taste. Memories of taste stays the longest of time... its true... for me, for you and both of our my loved ones!
